About the School:

New West is a school-within-a-school program of Buffalo High School and Johnson County School District 1, providing our students with an alternative opportunity for high school success through personalized, project-based, and community-focused learning.

Purpose. Our purpose is to prepare students to thrive in a changing world through innovative alternative education opportunities while helping them develop a strong sense of connection to our communities.

From the Chef/Instructor:

 

A partnership has developed this year between Buffalo High School, Sheridan College and the Bomber Mountain Civic Center in the creation of the all new Culinary Program offered through the Buffalo High School. The classes that are being taught are Concurrent culinary courses CULA 1510 Sanitation (1 credit) followed by CULA 1515 Basic Culinary Skills (3 credits) and we meet every week day for 7th and 8th periods at the BMCC.

Our inaugural class consists of 14 students that are sure to please whomever they feed. They are all quite skilled and have a desire to expand their culinary knowledge for college credit as well as learning the proper cooking techniques involved in every day cooking.

By the end of the semester the students will be proficient in areas such as breakfast cookery, creation of stocks and sauces, knife skills, menu development, and introductory baking. The students will also graduate with a National ServeSafe kitchen safety certification good for 5 years! We are having a blast and look forward to Buffalo and Johnson County helping us along the way by joining us for various fundraising events to keep the program going. We are looking forward to serving you.

Sam Bayliss, instructor, is the owner and operator of Chef Sam, LLC providing any culinary services that you desire including catering, consulting, menu development, baking, sanitation and safety instruction as well as anything culinary related now located at the BMCC in Buffalo.
